Summer is coming and the time for warm apple pies and heavy chocolate desserts is over. How about a lovely fruity creamy sorbet instead?
The tricky thing with frozen desserts is that you can end up with a block of frozen fruit and liquid that you have to chip away at with a chisel to get shards of it! This spectacular fruit sorbet prevents that from happening by using frozen fruit which results in a super smooth and creamy dessert. The knife slides through it (almost) like butter!
I make this with three layers, mango, strawberry and pineapple. If you like, you can add a fourth layer of kiwi, or substitute the pineapple layer with kiwi. Depends on your taste buds!

Triple Layer Sorbet
Yields a 9x13 pan
Mango Layer
1 12 oz bag frozen mangoes or 2 fresh mangoes, cut into chunks and frozen.
1 cup good quality orange juice
1/3 cup sugar
Strawberry Layer
1 12 oz bag frozen strawberries
1 cup good quality orange juice
1/3 cup sugar
Pineapple Layer
Large can of pineapple chunks, drained, frozen
1 cup good quality orange juice
1/3 cup sugar
Kiwi Layer
7 kiwis, cut into chunks and frozen
1 cup good quality orange juice
1/3 cup sugar
Place the frozen fruit in a food processor with the S blade knife attachment.
Add the orange juice and sugar, and process until smooth.
Pour into a 9x13 aluminum pan and place in the freezer on a flat surface.
When frozen, proceed with the next layer as above. Pour on top of first layer, and freeze.
Proceed as above with the third and optional fourth layer. Cover and freeze.
To serve, cut into squares. Garnish with a mint leaf, fresh piece of fruit, or drizzle plate with fruit syrup.
